Currently, we use three different processors. Snow Creek Meats and Blalock Meats process all of our grass-fed, grass-finished beef. Blalock Meats processes our pastured pork. Pilot Processing processes our pastured chicken. Snow Creek Meats is a State inspected facility less than 20 miles from our home.  Blalock Meats is a USDA inspected facility in Rabun Gap, Ga, about 65 miles from our home. Our beef is dry-aged for 3 1/2 - 4 weeks.  At Snow Creek Meats all cuts are vacuum sealed, except for Ground Beef. At Blalock Meats all cuts are vacuum-sealed.  Pilot Processing is a USDA inspected facility in Marion, NC. Chickens are vacuum-sealed.
